Sausage and Peppers
2 lbs. Italian sausage (cooked and cut into 4 oz pieces)
1 med green bell pepper, 1 med yellow, 1 med red - cut into strips
1 tsp minced garlic
2 tbsp olive oil
1 can 28 oz crushed tomatoes
Salt and pepper to taste
2 tsp fresh chopped basil
Heat oil until hot but not smoking
add peppers, onion and garlic, cook until onion has browned slightly stir, to prevent sticking.
Add tomatoes, basil and sausage to pepper mixture.
Bring to boil, reduce to simmer and cook 10 min
season with S&P
